eXplore - eXperiment - eXclusive
The name Project XXX abbreviates eXplore - eXperiment - eXclusive and identifies innovative, unique wines in omeopatic quantities, for which the variety and/or “unusual technique in the vineyards or the cellar can vary from year to year. The first wines produced are Mashed Pinot Grigio, 666 bottles which owe their structure and unmistakable color to two weeks of maceration and maturation in a ceramic egg, whilst for the One by One Cabernet Sauvignon Riserva bottled in only 150 magnums every berry was picked from the stems individually and by hand.
