The fully ripe grapes are harvested and dried in crates before being pressed in March of the following year. 18 liters of must are obtained from 100 kg of fresh grapes. This is followed by several weeks of fermentation, and 24 months of aging in tonneaux and barriques.

The origin of this wine

Moscato Giallo is one of the oldest known grape varieties in the world. Its origins likely lie in the eastern Mediterranean or Near East, from where it spread in ancient times via Greece and Italy to Central Europe. In Alto Adige, the variety has been documented since the 19th century.
