Brut Nature Spumante DOC 2016

Vintage

Molte le sorprese che l’annata 2016 ha portato con sé. Una tiepida primavera è stata seguita da un gelido aprile che ha bloccato la crescita. L’energico e costante lavoro in vigneto è riuscito a far fronte alla situazione. L’instabile inizio estivo ha lasciato posto alle giornate di sole di fine agosto e settembre restituendoci l’ottimismo. La vendemmia è iniziata a metà settembre. I vini bianchi esprimono una aromaticità fragrante sostenuta da un’acidità scolpita ed i rossi sono profumati, fragranti e con una giusta acidità.

Vinification

Soft pressing of the whole bunch and forced separation of the free-run must. Temperature-controlled fermentation: 80% in steel’s tank, 20% in tonneaux. Tirage made in June, 2014, second fermentation and bottle aging sur lies for 48 months. Degorgement zero dosage.

Vineyard

The grapes are selected from the vineyards lying at 600 m a.s.l. and facing East, at the foot of the Passo della Mendola. The soil is Dolomitic limestone.
