Vintage
In many respects 2021 was a demanding and challenging wine growing year. The winter months were mainly sunny but very cold. In spring the temperature was slow to rise, and that delayed the vegetative development of the vines. This was only partly compensated by the warm and sunny start to the summer, while the weather in July and August was very varied. The grape harvest accordingly began relatively late, on September 9. The wet September was an organizational problem for our wine growers, but ultimately a very good harvest was completed on October 26.
Tasting notes
– Golden yellow tone with slight rosé reflections
– fine and persistent perlage, thanks to the long time on the lees
– white flowers memories, bread crust and crunchy yellow fruit, definite smell and lively minerality
– bright and rapturous acidity and creamy finish
Recommendation
The Brut Nature is perfect as an aperitif and goes well with light antipasti such as prawn salad, beef carpaccio or bruschetta with fresh tomatoes and olive oil. Thanks to its lively acidity, it also harmonizes well with Mediterranean starters and grilled fish.
Vinification
Soft pressing of the whole bunch and forced separation of the free-run must. Temperature-controlled fermentation: 70% in stainless steel tanks, 30% in tonneaux. Tirage made in May, 2021, second fermentation and bottle aging sur lies for 39 months. Degorgement zero dosage.
Vineyard
The grapes are selected from the vineyards lying at 600 m a.s.l. and facing East, at the foot of the Passo della Mendola. The soil is Dolomitic limestone.
